The ThunderBolt 3 docks I have shortlisted are all DisplayPort rather than HDMI also. It supports HDMI 2.0, however I would like the least disruption possible. Mine is a Samsung U24E590D, although I am considering upgrading that next year too. The question of whether Apple manufactures its own brand of cables, or carries third-party cables in its retail store, is separate from the question of whether DisplayPort Alt Mode support is there for others to build upon. While Apple doesn't sell USB-C to DisplayPort (or Mini DisplayPort) cables, you can find many such cables on Amazon. It looks like the reason for TB/USB-C -> DP cables not working properly, or at all, is that the ports on the macs do not support DP Alt Mode. The specs for the M1 MacBook Air and Pro state "Native DisplayPort output over USB‑C", however this Apple support thread makes me think this is not working properly:
